What is the nutritional value of zongzi?

The main component of Zongzi is glutinous rice, which contains a lot of carbohydrates and a small amount of protein, trace elements, minerals and vitamins. Different kinds of zongzi have slightly different nutritional components. From the perspective of traditional Chinese medicine, it can warm the spleen and stomach, tonify the middle energizer and replenish qi, and relieve spleen and stomach deficiency and cold, poor appetite, abdominal distension and diarrhea to some extent. Glutinous rice has astringent effect. It also has a good therapeutic effect on frequent urination and spontaneous sweating.

Is zongzi easy to digest?

From the nutritional analysis, in fact, Zongzi is easy to digest, its main component is glutinous rice, mainly amylopectin. This kind of starch is more easily hydrolyzed and gelatinized in hot water and absorbed by human body. The blood sugar fluctuation of human body will also be more obvious. Glutinous rice is mainly amylopectin. Japonica rice is mainly amylose. So it is also rice, and glutinous rice is easier to absorb than japonica rice.

Then why do some people think it’s hard to digest, so they feel flustered after eating zongzi and don’t even feel hungry all day?

Although glutinous rice is easy to absorb, zongzi will be tied tightly when making, the gap between rice will be reduced, and the molecular structure will be difficult to extend, so it is difficult to be contacted by digestive juice and relatively difficult to digest. How to choose zongzi

Although zongzi is delicious, these people should pay special attention to controlling the consumption.

1. Diabetic patients

Zongzi is high in calories, which easily leads to a rapid increase in blood sugar after meals, which is very unfavorable for blood sugar control. In particular, red dates, red bean paste and candied jujube dumplings should not be dipped in sugar. If the blood sugar is stable on weekdays, it is advisable to eat 50 ~ 75 grams at a time. Eating with green leafy vegetables can delay the rapid rise of blood sugar. In addition, zongzi is eaten as a staple food, and it is not appropriate to eat other high-starch foods such as potatoes and vermicelli.

2. Old people and children

Because the main component of zongzi is glutinous rice, and the function of the elderly and children in the digestive tract is relatively poor, excessive consumption is prone to indigestion, accompanied by abdominal distension, abdominal pain, diarrhea and other discomfort symptoms.

3. Patients with gastrointestinal diseases

Course of making zongzi

Prepare ingredients: glutinous rice, pork, zongye, zongsheng, soy sauce, sugar, old wine, etc. It is best to choose round glutinous rice, which makes the taste more sticky and glutinous. Pork can choose pork leg or pork belly.

Step 1: Soak the leaves and string of zongzi until soft and clean. If it is dry, soak the leaves one night in advance.

Step 2: Clean the glutinous rice and soak it for five to six hours.

Step 3: Peel the pork, cut it into pieces of 2 ~ 3cm, then put in 2 tablespoons of soy sauce, 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of salt and 1 tablespoon of sugar, and then marinate it for 3 ~ 5 hours to make the meat fully tasty.

Step 4: Boil the leaves in a hot water pot for 15 minutes, then take them out and put them in cold water for later use. Boiled zongzi leaves will be more flexible and not easy to break when wrapped.

Step 5: Overlap two zongzi leaves together. The zongzi leaves can also be moistened with some water, and then folded to the middle to form a conical funnel. Try not to have a big hole in the sharp corner in the middle. Hold the zongzi leaves in our palms and you will get a beautiful zongzi slot.

Step 6: Spread two spoonfuls of glutinous rice into it, add a piece of pork belly, and finally scoop one spoonful of glutinous rice. It just covers the pork belly, not too full, or it won’t be wrapped. Then the leaves at both ends cover the glutinous rice down, wrap it down along the edge of the leaves, take the long leaf roots and press them down, and then tie the rope around the edge of the leaves that will be tilted twice, then pull it and fasten it again. A zongzi will be wrapped!

Step 7: After all the dumplings are wrapped, put them in the pot and cook them. When cooking meat dumplings, the water must not pass through the dumplings. After the fire boils, turn to medium and small fire and cook for 2 hours. After turning off the fire, stew for a while before eating. It tastes better.

Tips: eat zongzi while it is hot. Don’t eat too much at a time. Don’t be greedy!
